 French Potato Salad | Feasting at Home

April means spring produce is finally arriving—and we’re celebrating spring potatoes! While potatoes often get labeled as high in carbs, there’s a hidden benefit in this recipe: when cooked potatoes are chilled (for at least 4 hours), they form resistant starch.

Resistant starch acts like fiber, bypassing digestion in the small intestine and feeding beneficial gut bacteria in the colon. This process produces short-chain fatty acids like butyrate, which supports gut health and helps maintain a strong intestinal barrier. It also promotes healthy bacteria and can reduce blood sugar spikes compared to freshly cooked potatoes.
